We were told by the salesman at Currys that we could use our Panasonic DVR model DMR-HW120 with our new Sony Bravia KD43XG8096 television. We paid £45 for set-up and demonstration of equipment. When the equipment was set up the guys showed us that my already recorded programmes on the DVR could be played back, then they left. When I tried to record a new programme to the DVR there is no capability to do this now??? Also, I can find no instruction on how to record programmes to the Sony Bravia television, although there is a 'Record' button on the Sony remote control, it just comes up with an error message stating "This button is unavailable in YouView mode". So far, I'm unhappy. Can anyone help please?

Firstly you cannot “pair” your DVR device to any TV. You can however connect it to any TV using a cable. The fact that the DVR doesn’t record has absolutely nothing to do with any TV.
However as already said, the chances are the Curry’s installer has disconnected the aerial from the DVR device so you should be talking to Curry’s Know How to come back and correct their mistake.
If I am wrong, would you please explain how a new TV can interfere with you DVR device 😁
Surely whether or not you can record to a DVR has to do with how your input signal (ariel, satellite) is connected. I would check that the cable is going first to your DVR, then onto the Sony TV. If they have connected it direct to the TV, your DVR won't be getting a signal to record.
Regarding recording on the TV itself, you'll need to have a properly formatted USB storage device attached. And you would only be able to record from live TV, not to "catch-up" services like YouView.
Hope this helps.
